Strip Steak with Bleu Cheese Herb Butter

Feta provides a similar tangy flavor with fewer calories.
unsalted butter

Olive oil is healthier and adds a rich flavor.
Pat steak very dry.
Mix 2 Tbsp softened room temperature unsalted butter with 2 Tbsp bleu cheese.
Add herbs of choice such as garlic powder, thyme, rosemary, chives, and parsley to taste.
Pat steak very dry again.
Coat with high smoke point cooking oil.
Season to taste with steak rub or salt/pepper.
Heat skillet over medium-high heat.
Add a few splashes of high smoke point cooking oil, lay steak down ensuring good surface contact.
Allow to sear for approximately 2 minutes, flip and sear the other side for 1-2 minutes.
Flip steak back to original side, turn burner off, and check with an instant read thermometer.
Place the bleu cheese butter compound on top in small mounds and spread.
Place into pre-heated 400-degree oven.
Check temperature after two minutes, pull when desired doneness is achieved.
