Pat dry the New York strip steaks with a paper towel to remove moisture.
Preheat the oven to 425° Fahrenheit.
Generously season both sides of the steak with salt and black pepper.
Preheat a cast iron skillet to smoking point until smoke comes out.
Pour 2 tablespoons of canola oil into the skillet and transfer the steaks in.
Sear each side of the steak for 1 minute to create a crust.
Sear the sides of the steak for 30 seconds each.
Scoop out a couple tablespoons of oil from the skillet before adding the butter.
Add 3 tablespoons of unsalted butter, 2 cloves of garlic, and a couple of sprigs of rosemary and thyme to the skillet.
Tilt the skillet and baste the steaks with the melted butter using a spoon.
Transfer the skillet to the preheated oven and cook for 5 minutes for medium-rare.
For medium, cook in the oven for an additional 2 minutes.
Check the internal temperature of the steak; it should be around 120° Fahrenheit.
Transfer the steak to a sheet pan and let it rest for 10 minutes.
After resting, slice the steak into pieces approximately 1/4 of an inch thick.
Plate the sliced steak and optionally season with more salt and black pepper.
