Trim fat off steak and cut into 1’’ cubes.

Coat steak all over with a light drizzle of avocado oil.

Season with a light layer of garlic salt, be sure to coat the sides. Next, season with onion granules, all over. Season with kosher salt all over and then freshly ground black pepper.

Allow steak to rest at room temperature for 30-60 minutes preferably.

While you are waiting for the steak to rest, you can make the compound butter. In a small bowl, mix together butter, minced garlic, minced parsley and Worcestershire sauce. Set aside.

Tip: If you want to serve rice on the side, this would be a good time to get it started.

Next, rinse and dry asparagus and mushrooms.

Trim ends off mushrooms and slice shiitake mushrooms.

Add to base of air fryer and season with a drizzle of avocado oil, salt and freshly ground black pepper. Cook on Max Crisp for 4 minutes for thin asparagus and 6 minutes for thicker asparagus spears. (425°-450°F / 218°-232° C)

Once done cooking, add crisper rack on top of the vegetables, place steak on top and spread the cubes of fat all over the crisper rack. The fat will render into tallow and season the vegetables. Plus it will create delicious chicharrones you can enjoy.

Set time to Max Crisp for 7-9 minutes for medium rare and 11-13 minutes for medium well. (425°-450°F / 218°-232° C). You will want to check the steak after 7 minutes with an instant read digital thermometer. This is because the steak weight and thickness varies. I checked mine at 7 minutes and 11 minutes. At 11 minutes, my steak was 145. (It will also continue to cook slightly while resting.)

After the steak has reached your desired doneness, place a dollop of compound butter and close the lid for 1 minute. After 1 minute, spread the butter over the top of the steak and move it to a cutting board or warm plate to rest for 5 minutes.

Taste the asparagus to make sure it is fully cooked through, if it needs more time, do this now. If not, toss the vegetables in the delicious sauce and serve alongside the steak and mushrooms.
