Take 4 Prime New York strip steaks out of the packaging and show them to the camera.
Discuss the importance of marbling in the steak for juiciness and tenderness.
Select 2 steaks to cook and place the other 2 in Ziploc bags for later use.
Allow the steaks to come to room temperature for 20-30 minutes before cooking.
Season the steaks generously with the steak seasoning on both sides, pressing it in to ensure it sticks.
Let the seasoned steaks sit at room temperature to absorb the seasoning while preparing the grill.
Prepare the Big Green Egg Mini Max grill by removing the grate and shaking off the ash from leftover charcoal.
Top off the grill with more lump charcoal if needed and use speed light starters to ignite the charcoal.
Wait for the grill to reach around 500 degrees Fahrenheit before cooking the steaks.
Place the steaks directly on the hot grill grates.
Cook the steaks using the 'just keep flipping' method, flipping them every 30 to 45 seconds to ensure a nice crust without overcooking the edges.
