New York Strip Steaks With Chimichurri Sauce

Brush the New York strip steaks with unsalted butter.
Season the steaks generously with smoked salt and smoked black pepper.
Grill the steaks on one side until medium rare, then flip to the other side and continue grilling.
Remove the stems from cilantro, flat leaf parsley, and mint, keeping only the leaves.
In a food processor, add the fresh herbs and chop until finely minced.
Chop the garlic and add it to the food processor.
Remove the seeds from the serrano peppers and add them to the processor.
Add 3 tablespoons of Dijon mustard and 3 tablespoons of honey to the processor.
Season with salt and pepper (not using smoked salt and pepper).
Process the mixture until combined, then slowly add in 1 cup of extra virgin olive oil while processing.
Transfer the chimichurri sauce to a pourable container.
Remove the steaks from the grill and drizzle chimichurri sauce over them.
