Pour in enough water to cover the ingredients and bring to a boil.
Add thyme, bay leaves, and black pepper, then reduce heat to simmer.
Cook for 30-40 minutes until the vegetables are tender, stirring occasionally.
Add corn and cook for an additional 5-10 minutes.
Finish with lime juice and chopped cilantro before serving.
