Whole wheat flour adds fiber.
Gather all ingredients: 6 large granny smith apples, 1 large lemon, unsalted butter, vegetable shortening, 1 large egg, all-purpose flour, sugar, brown sugar, salt, cornstarch, vanilla extract, cinnamon, and allspice.
For the pie crust, combine 3 cups of all-purpose flour, 4 tablespoons of sugar, and 1/2 teaspoon of salt in a mixing bowl.
Add 9 tablespoons of unsalted butter and 9 tablespoons of vegetable shortening to the flour mixture.
Using a pastry cutter, cut the butter and shortening into the flour until it resembles coarse crumbs.
Add 1/2 cup of cold water and stir until the mixture forms a dough.
Refrigerate the dough for 30 minutes.
Peel the apples using a food peeler, then core and slice them in half.
Squeeze the juice of 1/2 a lemon over the apple slices and toss them to prevent browning.
In a bowl, mix 1 cup of sugar, 1/2 cup of brown sugar, 3 tablespoons of cornstarch, 1 teaspoon of cinnamon, 1/4 teaspoon of allspice, and 1/4 teaspoon of salt.
Stir the apple slices into the sugar mixture and let it sit for 5 minutes to release juices.
Strain the apple mixture over a bowl to separate the juices from the apples.
In a large pot over medium-high heat, melt 3 tablespoons of unsalted butter.
Add the apple juices to the pot and bring to a simmer, cooking for 2 minutes until it thickens.
Turn off the heat and add the apple slices and 2 teaspoons of vanilla extract, stirring to combine.
Let the filling cool completely.
Roll out half of the pie crust on a floured surface to a 13-inch diameter circle.
Transfer the rolled dough to a 9.5-inch deep dish pie pan, pressing it down into the sides.
Trim any excess dough, leaving about 1.5 inches hanging over the edge.
Roll out the other half of the dough to another 13-inch diameter circle.
Add the apple filling into the pie pan, spreading it evenly.
Roll the second dough over the filling and trim excess, leaving 1.5 inches hanging.
Tuck the edges of the dough under the pie pan edge and crimp to seal.
Preheat the oven to 350°F (175°C).
Cut a hole in the center of the pie crust and make four slits on top for steam to escape.
Whisk 1 large egg in a bowl and brush it over the pie crust with a pastry brush.
Mix 2 tablespoons of sugar and 1 teaspoon of cinnamon and sprinkle it over the pie crust.
Bake the pie in the preheated oven for 1 hour.
Remove the pie from the oven and let it cool completely before serving.
