Garri Balls
Cultural Context
Garri balls are a popular snack in Nigeria, made from garri, a staple food derived from cassava. Traditionally enjoyed as a quick energy boost, they are often served at gatherings and celebrations. Today, variations exist, incorporating different fillings and coatings, making them a beloved treat both locally and among the diaspora.
Decide to make garri balls as a different recipe.
Gather ingredients: 1.5 cups garri, 1/3 cup sugar, 0.5 cup milk powder, 0.5 teaspoon salt, 0.5 teaspoon red chili powder (optional), and 1/4 teaspoon ginger powder (optional).
Mix all the dry ingredients together in a bowl.
Boil water to prepare the garri, similar to how you would make garri for swallow.
Pour the boiled or hot water into the garri and mix until prepared.
Rub vegetable oil or butter on your palms to prevent sticking, then mold the garri mixture into mini balls.
Cover the molded balls to prevent them from drying out while frying the first batch.
Heat vegetable oil in a pan until very hot before frying the garri balls.
Carefully add the garri balls to the hot oil, ensuring not to overcrowd the pan.
Do not stir immediately; let the balls sit for a few seconds before stirring gently from underneath to avoid breaking them.
Fry the garri balls until they turn light golden brown, which takes about 15 minutes.
Once they are light golden brown and floating on top of the oil, remove them from the oil.
Repeat the frying process with the remaining molded garri balls.
