Grind 2 Tbsp toasted sesame seeds.

Add 3 Tbsp sugar, 2 tsp sesame oil, 3 Tbsp soy sauce, 2 Tbsp rice vinegar, and 1 tsp la-yu to a bowl and mix well.

Chop 2 scallions into 3 pieces.

Slice 1 inch ginger into thin slices.

Butterfly 1/2 lb chicken breast.

In a large pot, add water, ginger, and scallions.

Add 1 tsp salt and 2 Tbsp sake to the pot.
