3 ripe mangoes
1 raw mango

1 cup sugar

Wash the ripe and raw mangoes thoroughly.

Peel the ripe mangoes and cut them into small cubes, placing them on a plate.

Peel the raw mango and cut it into small pieces, placing them on a separate plate.

Grind the raw mango pieces in a blender with 0.5 to 0.75 cups of water until smooth.

Add the diced ripe mango to the blender and grind again until a smooth puree is formed.

In a pot, add the mango puree prepared earlier.

In the same blender, add 1 glass of water, mix well, and pour it into the pot to avoid wasting any mango puree.

Mix the contents in the pot and cook for about 2 minutes to ensure the raw mango is well cooked.

Add sugar to taste, approximately 1 cup, and mix well. Cook until the mixture thickens, about 5 minutes, stirring continuously.

Once thickened, turn off the heat and add 1 teaspoon of white vinegar, mixing well.

Let the mixture cool down completely, as it will thicken further when cooled.

Strain the mixture through a sieve to remove any remaining pulp or fibers.

To adjust the consistency, add more water if needed, and mix well.

Chill the mixture in the freezer for 1-2 hours or add ice cubes before serving.
