1 teaspoon salt
3/4 teaspoon amchur powder
3/4 teaspoon garam masala

Wash and clean the fenugreek leaves, removing the stems and dirt.

Wash the fenugreek leaves 3-4 times to remove all dirt particles.

Set the cleaned fenugreek leaves aside to dry.

Peel and dice 4-5 small potatoes into white-sized pieces.

Chop 1 onion, 4-5 cloves of garlic, 1 inch of ginger, and 2 green chilies.

Cut the cleaned fenugreek leaves into smaller pieces.

Heat 1 tablespoon of ghee in a kadhai until warm.

Add 1 broken dry chili and 1 teaspoon of cumin seeds to the ghee and let them pop.

Add the chopped garlic, ginger, and green chilies to the ghee and roast for 1 minute.

Add the chopped onion and cook until translucent, about 2 minutes.

Mix in the diced potatoes with the onions.

Add 1/2 teaspoon turmeric powder and 3/4 teaspoon red chili powder, mixing well.

Cover the kadhai and cook the potatoes for about 5-6 minutes until they are 60% cooked, checking every 2-3 minutes.

Add the chopped fenugreek leaves and salt to taste, along with 1 teaspoon coriander powder and 3/4 teaspoon amchur powder.

Mix everything well and cover to cook for another 5 minutes, checking occasionally to prevent sticking.

Finally, add 3/4 teaspoon garam masala and mix well before serving.
