🥗Healthier: zucchini

💰Cheaper: potatoes

Zucchini is lower in calories and potatoes are more budget-friendly.

1

Break the garlic cloves and slice the ends off.

2

Peel the garlic by cutting the tips and removing the outer layer.

3

Smash the garlic in a pilon, adding salt to taste to prevent it from getting slimy.

4

Cut the edges off the plantains and make shallow cuts along the sides without cutting all the way through.

5

Peel the plantains using your nails to help remove the skin.

6

Slice the plantains into 1 to 2-inch thick pieces.

7

Heat oil in a frying pan over medium-low heat until hot.

8

Fry the plantain pieces for 2-3 minutes on one side, then flip and fry for another 2 minutes on the other side.

9

Remove the fried plantains and let them drain on paper towels to avoid soaking up oil.

10

Prepare a small plate with smashed garlic, olive oil, and mix well.

11

Smash each fried plantain using a flat plate or cutting board until thin.

12

Dip the smashed plantains in the garlic and olive oil mixture before frying again.

13

Increase the heat back to medium-low and fry the smashed plantains for 1-2 minutes on each side until crispy.

14

Prepare a topping mixture with leftover smashed garlic, olive oil, vinegar, parsley, and black pepper.

15

Once the tostones are crispy, remove them from the oil and top with the garlic mixture.
