Prepare the curry paste by chopping lemongrass, kaffir lime leaves, galanga, shallots, garlic, and turmeric powder, then blend or smash until fine.

Combine 1 can of coconut milk, 4 tbsp fish sauce, 1 tsp salt, 0.5 tsp turmeric soup base mix, and 1 tbsp chicken soup mix in a pan and bring to a boil for 2 minutes, then set aside.

Smash the stems of the M Choy and separate the leaves.

Mix 3 lbs of tilapia fillets with the curry sauce in a mixing bowl, adding 2 eggs to help hold the mixture together.

Prepare the banana leaf by cutting it into pieces and using toothpicks to secure the corners to form a bowl.

Place some M Choy at the bottom of the banana leaf bowl, add the fish mixture, and top with more sauce.

Garnish with chopped kaffir lime leaves and steam the banana leaf bowl in a steamer for 15 minutes.
