Preheat the oven to 400°F (200°C).
Heat oil in a pan and add cumin seeds until they sizzle.
Add chopped onion and sauté until translucent.
Stir in ginger garlic paste and cook until fragrant.
Add mixed veggies, red chilli powder, garam masala, turmeric powder, and salt; cook until vegetables are tender.
Remove from heat, add coriander leaves; mix well.
Roll out puff pastry sheets.
Cut the pastry into squares or circles.
Place a spoonful of the vegetable mixture in the center of each pastry piece.
Fold the pastry over to form a triangle or half-moon shape; seal the edges.
Brush the tops with oil if desired.
Arrange on a baking sheet lined with parchment paper.
Bake for 20-25 minutes or until golden brown.
