0.25 teaspoon salt
0.25 teaspoon black pepper
2 tablespoons lime juice
2 tablespoons salted butter

Add 1.5 cups of red lentils, 3 cups of vegetable stock, and 0.75 cup plus 1 tablespoon of canned full fat coconut milk.

Sprinkle in 0.25 teaspoon of salt and 0.25 teaspoon of black pepper; stir together and bring to a boil.

Lower the heat and simmer for 15 minutes, stirring often until the lentils are soft and tender.

Turn off the heat and stir in 2 tablespoons of lime juice and 2 tablespoons of salted butter.
