Traditionally, dahl is enjoyed daily in many Indian households, highlighting its significance in both everyday meals and festive occasions. Today, variations of dahl are popular worldwide, celebrated for their rich flavors and health benefits.

Green lentils are often less expensive and provide a similar texture.
Add 1 tablespoon of oil or ghee to a medium saucepan and heat over medium heat.
Add 1 finely diced onion and 1 finely diced red pepper; fry together for about 3 minutes until slightly softened.
Add 3 minced garlic cloves, 1 tablespoon of ginger paste, 1 tablespoon of garam masala, 1 teaspoon of ground turmeric, 0.5 teaspoon of paprika, 0.5 teaspoon of chili flakes, and 0.25 teaspoon of fenugreek; stir together and cook for a further minute.
Add 1.5 cups of red lentils, 3 cups of vegetable stock, and 0.75 cup plus 1 tablespoon of canned full fat coconut milk.
Sprinkle in 0.25 teaspoon of salt and 0.25 teaspoon of black pepper; stir together and bring to a boil.
Lower the heat and simmer for 15 minutes, stirring often until the lentils are soft and tender.
Turn off the heat and stir in 2 tablespoons of lime juice and 2 tablespoons of salted butter.
Serve with a swirl of natural yogurt, topped with fresh coriander and chili flakes.
