Corn and Coconut Red Lentil Dahl

Preheat the oven and prepare a baking tray with parchment paper.

Place the corn on the cob on the parchment, drizzle with olive oil, and sprinkle with salt. Wrap it in parchment paper and then in foil.

On the same baking tray, add whole garlic cloves and cherry tomatoes, drizzle with olive oil, and sprinkle with salt. Roast in the oven for 20 minutes.

Chop the onion and a small amount of garlic. Sauté in a pan with a little salt until softened.

Crush cumin seeds and coriander seeds in a pestle and mortar, then add to the pan along with nigella seeds, cardamom pods, and chili flakes.
