Start by making the vanilla pastry cream: combine egg yolks, sugar, salt, vanilla extract, and cornstarch in a large glass bowl and whisk until smooth.

Heat milk in a saucepan over medium heat until lightly simmering, then pour half over the egg mixture and whisk vigorously.

Return the mixture to the heat and cook over medium heat, whisking for about 30 seconds after bubbles appear, until thickened.

Pour the cream into a heat-safe bowl, cover with plastic wrap touching the surface, and let cool for 1 to 2 hours.

For the bread dough, heat milk in the microwave until warm (around 110°F), then add active dry yeast and a tablespoon of sugar; let sit for 5 to 10 minutes until bubbly.

In a stand mixer, combine salt, remaining sugar, cardamom, and egg; mix until combined.

Add the bubbly yeast mixture to the egg mixture, then slowly add flour and softened butter, mixing until a dough forms.

Knead the dough for about 10 minutes until smooth, then cover with a towel and let rise for about 45 minutes until doubled in size.

Shape the dough into about 10 balls and place them on lined baking sheets, letting them rise for another 15 to 20 minutes.

Make a well in the center of each dough ball using a shot glass or fingers for the filling.

Fill each well with 1 to 2 tablespoons of pastry cream and let rise for another 15 to 20 minutes before brushing with egg wash.
