Moong Dal Dhokla
Cultural Context
Originating from the state of Gujarat, Moong Dal Dhokla is a popular snack made from fermented moong dal. Traditionally served at breakfast or as a snack, it reflects the region's love for steamed dishes that are light and nutritious. Today, dhokla has gained popularity across India and beyond, often enjoyed with various chutneys and garnishes.

Soak moong dal in water for 4-6 hours or overnight.
Drain and rinse the soaked moong dal.
Blend the moong dal with ginger, green chili, and water until smooth.
Transfer the mixture to a bowl and add salt, turmeric powder, lemon juice, and sugar; mix well.
In a small pan, heat oil and add mustard seeds, allowing them to splutter.
Add curry leaves and asafoetida to the oil; sauté for a few seconds.
Pour the tempered oil mixture into the dal batter and mix thoroughly.
Add baking soda to the batter and mix gently until combined.
Grease a steaming tray or plate with oil.
Pour the batter into the greased tray, spreading it evenly.
Steam the batter in a steamer for 15-20 minutes until cooked through.
Check doneness by inserting a toothpick; it should come out clean.
Remove from the steamer and let it cool for a few minutes.
Cut the dhokla into squares or diamonds and garnish with coriander leaves.
Serve warm with green chutney or sweet chutney.
