Blanch cabbage leaves in boiling water until softened, about 2-3 minutes.
In a skillet, sauté chopped onion in olive oil until translucent, about 5 minutes.
Add ground beef to the skillet and cook until browned, about 5-7 minutes.
Mix in rice, tomato paste, minced garlic, spices, and chopped parsley; stir well to combine.
Season the mixture with salt, pepper, and lemon juice to taste.
Place a spoonful of the filling onto each cabbage leaf and roll tightly, tucking in the sides.
Arrange the stuffed cabbage rolls in a pot, seam side down.
Pour broth over the rolls until just covered; add bay leaves and cinnamon stick.
Cover the pot and simmer on low heat for 45 minutes to 1 hour, until rice is cooked.
Remove from heat and let sit for 10 minutes before serving.
