In a small pot, combine 2 tbsp (30ml) water, 1g kombu (or 0.5g MSG), 40ml soy sauce, 1 tbsp (15ml) sake, 3.5 tbsp (52ml) mirin, 1/8 tsp (1g) garlic, and 1/8 tsp (1g) ginger.

Heat the mixture gently over medium heat, ensuring it reaches around 60℃ (140°F) to develop umami from the kombu.

Boil the mixture slowly for 30-40 seconds to burn off the alcohol.

Prepare a piece of aluminum foil, spray oil on it, and ensure it sticks to the corners of the pot.

Place the chicken in the pot, cover with foil, and cook at 200℃ (392°F) for 6 minutes.

After 6 minutes, check the chicken and cook for an additional 4 minutes.

After 4 minutes, check again and cook for another 3 minutes.
