Shrimp Ceviche

Cultural Context

Ceviche is a traditional dish from Peru, often considered a national dish. It is made with fresh seafood cured in citrus juices, typically lime, and is served with various accompaniments. The dish reflects the coastal culture of Peru, where seafood is abundant and forms a significant part of the diet. Variations exist across Latin America, but Peruvian ceviche is renowned for its freshness and flavor.

1

If your shrimp is frozen, put it in a bowl and add enough warm water to cover. Let shrimp defrost for about 10 minutes.

2

Roll the limes and cut them in half to squeeze the juice. You need about 3 and 1/4 cups of lime juice.

3

Drain the shrimp and give it a gentle squeeze in the sink to remove excess water.

4

Devein the shrimp, remove tails, and peel them. Cut the shrimp into small pieces for the ceviche.

5

Add diced shrimp to a bowl and pour lime juice over it. Marinate raw shrimp for about 1 to 1.5 hours until pink and opaque, or 15 minutes if using cooked shrimp.

6

While shrimp is marinating, dice the tomato, mince the red onion, chop the cilantro, and mince the jalapeño, removing seeds for less spice.

7

After marinating, add shrimp and lime juice to the bowl with the diced vegetables. Stir gently and taste for salt and pepper.
