Cultural Context

Dorayaki, a beloved treat in Japan, consists of two fluffy pancakes filled with sweet red bean paste. Today, dorayaki can be found in various flavors and fillings, making it a favorite among both children and adults worldwide.

6 servings
Servings4
1 M-sized egg
5 g honey
45 g sugar
40 g shiratama flour (white rice flour)
60 g water
40 g all-purpose flour
1/4 teaspoon baking soda
sweet red bean paste (as desired)
1

Mix the all-purpose flour and baking soda together in advance.

2

Lightly beat the egg and add honey and sugar, mixing well.

3

Whip the mixture at medium speed for about 1.5 minutes until slightly fluffy and it disappears when dripped.

4

Mix the shiratama flour and water together well, then add to the whipped mixture and combine.

5

Sift in the pre-mixed all-purpose flour and baking soda, and mix gently with a whisk until there are no dry spots and it looks glossy. Finish mixing with a rubber spatula to complete the batter.

6

Cover the batter with plastic wrap and let it rest at room temperature for 20 minutes (do not let it rest for more than 20 minutes to avoid poor rising).

7

Heat a frying pan over high heat, then lower to medium heat and pour about 1.5 tablespoons of batter into round shapes. When bubbles appear on the surface, flip them and quickly cook the other side. Remove to a plate when done.

8

Once cooled, sandwich the sweet red bean paste between two pancakes.
