Servings4
50g Shiratamako (sweet rice flour)
40g cake flour
2/3 teaspoon baking powder
3 tablespoons milk
1 egg
70g cane sugar
1 teaspoon honey
180g anko (red bean paste)
1

Add milk and 1 tablespoon of water to Shiratamako little by little. Mix with a rubber spatula to crush the lumps.

2

Put the eggs in another bowl, beat them, add sugar and mix with a whisk. When it becomes whitish, add honey and mix.

3

Add the mixture from step 1 and mix with a rubber spatula, combine the cake flour and baking powder, and mix with a sieve.

4

Heat a frying pan (Teflon-processed), place it on a wet cloth and let it cool. Over low heat, mix the dough again and pour in a little over 1 tablespoon.

5

When air bubbles come out all over, turn it over and bake for another minute. In the same way, bake 12 sheets together, wrap them in plastic wrap to prevent them from drying, and let them cool. Divide the bean paste into 6 equal parts and sandwich.
