Cured Salmon Rice Bowl

1 piece dried kelp (kombu)
1/4 cup rice wine (rice vinegar)
3 tablespoons soy sauce
2 tablespoons raw cane sugar
1 tablespoon oligo syrup
3 green onions (scallions)
1/2 cup yellow onions (for garnish)
2 cloves garlic (for garnish)
1 lb salmon (fresh)
1 cup baby sprouts (radish sprouts)
1/2 cup pickled radish
1 tablespoon wasabi
2 cups freshly cooked rice

Begin by making the marinade.

Bring filtered water and dried kelp to a boil on medium high heat to make kelp broth.

Turn off heat and remove kelp from the broth.

Add rice wine to the kelp broth.

Add soy sauce next.

Add raw cane sugar and oligo syrup.

Turn on heat and give it a good stir.

Let the mixture simmer on low heat.

Cut some green onions and add them to the simmering pan.

Peel and cut yellow onions into halves, then add them to the pan.

Add peeled garlic cloves to the pan too and give it a stir.

Bring all the ingredients to a boil on medium high heat.

Turn off heat when done and fish out all the solids from the pan.

Remove the saucepan from the stove and allow the marinade to cool completely.

Prepare salmon for curing by placing sliced salmon in a glass container.

Cut yellow onions into thin slices and place them on top of the salmon generously.

Pour the marinade over the salmon, ensuring that all the salmon is fully submerged.

Cover with an air-tight lid and refrigerate for at least 4 hours.
