Vegetable broth reduces meat content while maintaining flavor.
Clean the cow tripe thoroughly under cold water.
Cut the tripe into bite-sized pieces and set aside.
Heat vegetable oil in a large pot over medium heat until shimmering.
Add chopped onions and sauté until translucent, about 5 minutes.
Stir in minced garlic and grated ginger; cook for 1-2 minutes until fragrant.
Add chopped tomatoes and green bell peppers; cook until softened, about 5 minutes.
Season the mixture with paprika, cayenne pepper, salt, and black pepper.
Add the tripe pieces to the pot and stir to coat with the mixture.
Pour in beef stock and add bay leaves; bring to a simmer.
Cover and cook on low heat for 2-3 hours until the tripe is tender.
Remove bay leaves and stir in fresh coriander and lemon juice before serving.
