Sauté onion until translucent, about 5-7 minutes.
Add tomato and cook until softened, about 3-5 minutes.
Combine cooked sorghum and beans with sautéed vegetables.
Season with salt and pepper to taste.
Simmer mixture for 10 minutes to meld flavors.
Serve warm, garnished with additional vegetables if desired.
