1/2 cup oil
1 tablespoon finely chopped garlic
2 inches ginger (julienned)
2 green chillies (cut)
1 onion (chopped into cubes)
1 green capsicum (diced)
1 tablespoon tomato ketchup
2 tablespoons schezwan sauce
1 teaspoon vinegar
1 teaspoon soy sauce
salt (to taste)
fresh spring onion greens

Cut 6 idlis into four pieces each.

Add 1/2 teaspoon pepper powder and 2 tablespoons corn flour to the idli pieces and coat them well.

Heat a wok and add 1/2 cup oil.

Once the oil is hot, fry the coated idli pieces until they are nice and crisp, then remove and set aside.

In the same wok, add 3 tablespoons of oil.

Add 1 tablespoon finely chopped garlic, 2 inches julienned ginger, and 2 cut green chillies; sauté until the ginger and garlic turn golden.

Add 1 chopped onion and sauté, reducing the flame a bit.

Add 1 diced green capsicum and sauté.

Add 1 tablespoon tomato ketchup, 2 tablespoons schezwan sauce, and 1/2 teaspoon pepper powder; stir well.

Allow the vegetables to cook for a minute, then add 1 teaspoon vinegar and 1 teaspoon soy sauce.

Toss the fried idli pieces into the vegetable mixture.

Sprinkle salt to taste, adjusting for the saltiness of the sauces.
