Mixed Berry Pavlova

Gradually add 250 grams of caster sugar one spoonful at a time while continuing to whisk.

Whisk until the mixture becomes glossy and forms stiff peaks.

Add vanilla extract to the meringue mixture and whisk to combine.

Prepare mixed berries by washing and slicing strawberries if necessary.

Spoon the meringue mixture onto a baking tray lined with parchment paper, shaping it into a round disc.
