Mixed Berry Pavlova

1 teaspoon cornstarch
1 cup heavy cream
2 tablespoons powdered sugar
1 teaspoon vanilla extract
2 cups mixed berries (strawberries, blueberries, raspberries)

Preheat the oven to 250°F (120°C) and line a baking sheet with parchment paper.

In a clean mixing bowl, beat the egg whites on medium speed until soft peaks form.

Gradually add the granulated sugar, one tablespoon at a time, while continuing to beat until the mixture is glossy and stiff peaks form.

Gently fold in the vinegar and cornstarch until just combined.

Spoon the meringue mixture onto the prepared baking sheet, shaping it into a round disk with a slight well in the center.

Bake in the preheated oven for 1 hour, then turn off the oven and let the pavlova cool completely inside the oven.
