Prepare sushi rice according to your preferred method.
Wash French leeks two to three times and set aside for decoration.
Cut carrot into flower shapes for decoration.
Slice avocado, mango, and cucumber into thin strips.
Take a block of sushi-grade salmon and remove the skin carefully.
Cut the salmon into small dice.
Mix diced salmon with a small amount of soy sauce and mayonnaise, and add toasted sesame seeds for marinating.
Place a nori sheet on a bamboo sushi mat, shiny side down.
Take a small ball of sushi rice and spread it over the rough side of the nori, leaving a margin at the top.
Flip the nori so the rice is on the outside (uramaki style).
Place sliced avocado and the marinated salmon in a line across the center of the rice.
Roll the sushi tightly using the bamboo mat, being careful not to press too hard to avoid squeezing out the rice.
Slice the roll into bite-sized pieces with a sharp knife, wetting the knife to prevent sticking.
Place thin slices of salmon on top of the sushi roll as a garnish.
Add additional avocado slices on top if desired.
Garnish with mint and serve with soy sauce.
