Ingredients

  • 2 lbs mussels, cleaned
  • 1 can (14 oz) coconut milk
  • 2 tbsp green curry paste
  • 1 tbsp fish sauce
  • 1 tbsp lime juice
  • 1 tsp sugar
  • 1/2 cup fresh basil leaves, chopped
  • 1/2 cup cilantro leaves, chopped
  • 1 red bell pepper, sliced
  • 1 cup vegetable broth
  • 2 tbsp olive oil

Instructions

  1. 1Heat olive oil in a large pot over medium heat.
  2. 2Add the green curry paste and sauté for 1-2 minutes until fragrant.
  3. 3Pour in the coconut milk and vegetable broth, stirring to combine.
  4. 4Add the fish sauce, lime juice, and sugar, and bring the mixture to a simmer.
  5. 5Add the cleaned mussels and sliced red bell pepper to the pot.
  6. 6Cover the pot and cook for about 5-7 minutes, or until the mussels have opened.
  7. 7Stir in the chopped basil and cilantro just before serving.
  8. 8Serve hot with crusty bread or over rice.

  5. 5Pour in the vegetable broth and white wine, bringing the mixture to a simmer.
  6. 6Add the cleaned mussels to the pot, cover, and cook for about 5-7 minutes, or until the mussels have opened.
  7. 7Stir in the lime juice and season with salt and pepper to taste.
  8. 8Remove from heat and sprinkle with fresh cilantro before serving.
  9. 9Serve the mussels in bowls with the broth and crusty bread for dipping.
