Soak 1 cup of white peas for a minimum of 8 hours.

In a pressure cooker, add soaked peas and 2 medium-sized chopped potatoes.

Add 4 tsp turmeric powder and 1 tsp salt, then pour enough water to immerse the ingredients.

Pressure cook for three whistles on medium flame.

Heat 2 tbsp of oil in a pan.

Add 1 tsp cumin seeds to the heated oil.

Add 2 finely chopped medium-sized onions and sauté until translucent.

Add 3 finely chopped green chilies and sauté until onions turn golden.

Add 1 tsp salt, 1 tsp chili powder, 1 tsp coriander powder, and 1 tsp cumin powder; mix well until raw smell disappears.

Add the cooked peas and potatoes, mixing everything well without fully mashing them.

Check seasoning and add more salt if needed; add 1/4 tsp garam masala powder and mix.

Let it simmer for about 5 minutes on low flame.

Squeeze the juice of half a lemon and add chopped fresh coriander leaves.

Assemble the chaat by adding ragda to a bowl, sprinkling with chopped onions, chaat masala, and sev, and garnish with coriander leaves.
