Measure 360 g of water and crumble 60 g of fresh yeast into it.

Sift 1 kg of flour into a bowl to ensure the dough is light.

Add 100 g of sugar and a pinch of salt to the flour.

Melt 100 g of softened butter and add it to the mixture along with 5 egg yolks and the contents of a vanilla bean.

Mix the ingredients starting on low speed until combined, then increase speed for 4-5 minutes until a dough forms.

Sprinkle a little flour on the working surface and knead the dough for 1-2 minutes until elastic.

Place the dough back in the mixing bowl, cover it, and let it rest for around 20 minutes.

After resting, cut the dough into equal pieces of about 50 g each.

Shape each piece into a round ball and place on a tray with a little oil; cover and let proof for another 1.5 hours.

Heat oil to 340°F (170°C) for frying the doughnuts.

Fry each doughnut for 2-3 minutes on each side until golden brown.

Remove from the oil and make a small hole in the middle of each doughnut for filling.
