Sufganiyot

Cultural Context

Sufganiyot, or jelly doughnuts, are a traditional treat during Hanukkah, symbolizing the miracle of the oil that lasted eight days. Originating in Eastern Europe, these sweet pastries are filled with jam and often dusted with powdered sugar. Today, they are enjoyed not only in Jewish households but also have gained popularity worldwide, with various fillings and toppings reflecting local tastes.

1

Combine warm water and sugar in a bowl; sprinkle yeast on top and let sit until foamy, about 5-10 minutes.

2

Mix flour and salt in a large bowl; create a well in the center.

3

Add the yeast mixture, eggs, and softened butter into the well; mix until a dough forms.

4

Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.

5

Place the dough in a greased bowl; cover with a cloth and let rise in a warm place until doubled in size, about 1-2 hours.

6

Punch down the dough and roll it out to about 1/2 inch thick; cut into circles using a cookie cutter.

7

Place a spoonful of jam in the center of half the circles; top with remaining circles and seal the edges.

8

Let the filled doughnuts rise for another 30 minutes until puffy.

9

Heat vegetable oil in a deep pan to 350°F (175°C); carefully fry the doughnuts until golden brown, about 2-3 minutes per side.

10

Remove from oil and drain on paper towels; dust with additional sugar before serving.
