Sufganiyot

Cultural Context

Sufganiyot, or jelly doughnuts, are a traditional treat during Hanukkah, symbolizing the miracle of the oil that lasted eight days. Originating in Eastern Europe, these sweet pastries are filled with jam and often dusted with powdered sugar. Today, they are enjoyed not only in Jewish households but also have gained popularity worldwide, with various fillings and toppings reflecting local tastes.

1

Put a little bit of flour down on the counter and on the rolling pin.

2

Roll out half of the store-bought pizza dough to about a quarter of an inch thick using a rolling pin with rings for even height.

3

Use a biscuit cutter to cut out circles from the rolled pizza dough.

4

In a bowl, add sugar to toss the donuts after frying.

5

Scoop seedless raspberry jam into one corner of a plastic bag and snip off the end to use for filling the donuts.

6

Heat about two inches of vegetable oil in a deep pan and monitor the temperature with a candy thermometer, aiming for around 350 degrees Fahrenheit.

7

Fry the dough circles in the hot oil until they puff up and turn golden brown.

8

Remove the fried donuts from the oil and toss them in granulated sugar.

9

Poke a hole in each donut using a skewer to create a cavity for the jelly.

10

Squeeze jelly into the hole of each donut until filled.
