Soak 1.5 cups of old-fashioned oats in 1.5 cups of water.
Gather ingredients: cinnamon sticks, nutmeg, 0.5 cup of sugar, lime zest, 1 can of 12 oz Carnation milk, 1 cup of 1% milk, almond extract, vanilla, and a pinch of salt.
Turn the stove on to medium-high heat.
Wash the cinnamon sticks and add 1 cup of 1% milk and 1 can of Carnation milk to a pot.
Add lime zest to the milk mixture.
Allow the milk to come to a boil.
Add a pinch of salt (1/8 teaspoon).
Turn the stove down to medium-low heat once the milk is boiling.
Add the soaked oatmeal to the pot.
Add 0.5 teaspoon of vanilla and 0.5 teaspoon of almond extract.
Grate some nutmeg into the mixture.
Add the 0.5 cup of sugar, reserving a little for later if needed.
Let the mixture simmer for 20 to 30 minutes, stirring every 5 minutes to prevent sticking.
If the liquid gets low, add a little warm milk to the pot.
Once done, turn off the stove and remove the cinnamon sticks.
Taste the oatmeal and add more sugar if desired.
Optionally, slice up bananas or apples to add to the bowl when serving.
