Prepare a 60/40 mix of collard greens and turnip greens.
Soak greens in water with kosher salt and a capful of lemon juice, scrubbing them clean.
Cut the collard greens into strips by rolling them and slicing them into desired sizes.
Remove tough stems from the greens, discarding them or leaving some for flavor.
Begin boiling water in a large pot to soften the smoked turkey and sausage.
In a large pot, add a couple of tablespoons of bacon fat and heat over low.
Mince 5 garlic cloves and add them to the pot, sweating them in the bacon fat without burning.
Quarter an onion and add it to the pot, allowing it to cook down and release flavor until translucent.
Add red chili flakes to the onion and garlic mixture for heat, adjusting to taste.
Once the onion is translucent, add the smoked turkey and andouille sausage to the pot.
Pour in water and Better Than Bouillon for flavor, stirring to combine.
Add the collard and turnip greens to the pot, stirring to combine with the other ingredients.
Cover the pot and let the greens cook down until tender, about 30-45 minutes, stirring occasionally.
