Add oil to pan and place on medium heat. When the pan is hot add bay leaves, cook for about 20 seconds, keep stirring and then add chopped garlic. Cook garlic until golden brown and then add onions.

Once onions are soft add salt and turmeric powder. Cook for about 2 minutes and then add vegetables. Mix well, cover with lid and cook on low heat until vegetables are cooked/soften.

Garnish with coriander and set aside to cool down.

Mix some flour with a bit of water in a small bowl to form a thick paste to hold the samosas together.

Cut your pastry sheet to size. Peel off one or two layers of pastry; using 2 sheets/layers per samosa will make it extra crispy.

Shape the samosa as shown in the video, fill it with the cold vegetable filling, and seal the samosa as demonstrated.

Deep fry the samosas until golden brown.
