Add chopped carrots and potatoes to the pot, stirring gently.
Continue to simmer, covered, for another 30-40 minutes until vegetables are tender.
Taste and adjust seasoning if necessary, adding more salt or pepper.
Remove bay leaves before serving, and garnish with fresh parsley.
