Rinse 1 cup of rice under cold water until the water runs clear.
In a pot, add 2 cups of water and the rinsed rice, then bring to a boil.
Once boiling, reduce heat to low, cover, and let it simmer for 15 minutes until fluffy.
In another pot, add 1/2 cup mixed vegetables and 2 tablespoons of sambar powder with enough water to cover the vegetables.
Add 1 teaspoon of turmeric and cook until the vegetables are soft, about 10-15 minutes.
In a separate pan, heat oil and add 1 teaspoon of mustard seeds and 1 teaspoon of curry leaves until they splutter.
Add 1/2 teaspoon of asafoetida to the pan, then pour in the cooked vegetable mixture and stir well.
Prepare the papadams by deep-frying them in hot oil until they puff up and become crispy.
Serve the rice on a plate, alongside the vegetable curry and sambar.
Add a serving of curd, coconut chutney, pickles, and lemon wedges on the side.
Garnish with chopped coriander leaves.
