2 tablespoons sun dried tomato paste
2 tomatoes on the vine

Preheat the oven to 220°C (428°F).

Roast the lamb on its own for about half an hour.

Cut red onions into wedges and place them in the roasting tin.

Chunk up leeks and add them to the tin.

Arrange waxy new potatoes around the outside of the tin.

Scatter fresh thyme over the vegetables.

Roast the vegetables in the oven for 10 minutes at 220°C (428°F).

After 10 minutes, take the lamb out of the oven and pour the chicken stock mixture over it.

Cover the roasting tin with foil tightly.

Reduce the oven temperature to 180°C (356°F) and roast for about 1 hour.

After 1 hour, take the lamb out and let it rest on a warm platter.

Rearrange the potatoes and add tomatoes on the vine over them.

Return the tomatoes to the oven for about 10 minutes to soften.

Carve the lamb thinly and serve with vegetables and sauce.
