Preheat the oven to 450F (230C).

In a bowl, mix the crushed garlic, fresh thyme leaves, olive oil, fine sea salt, and black pepper to create a marinade.

Rub the marinade all over the boneless lamb.

Place the lamb in a roasting pan and surround it with baby potatoes.

Roast in the preheated oven for about 1 hour and a half or until the internal temperature reaches 145F (63C).
