Pour in beef stock and add bay leaves, salt, black pepper, coriander, cumin, and chili powder
Bring to a boil, then reduce heat to low and cover
Simmer for 45-60 minutes, stirring occasionally, until meat is tender
Adjust seasoning to taste before serving
