Start by making a court bouillon (flavorful poaching liquid) with cold water, onions, garlic, lemon, bay leaf, peppercorns, tarragon sprigs, Old Bay seasoning, and salt.

Put the mixture over high heat, stir, and bring to a simmer.

Simmer the poaching liquid for at least 15-20 minutes to meld the flavors.

While the poaching liquid is cooking, prepare the cocktail sauce using extra hot horseradish, chili sauce, ketchup, hot sauce, lemon juice, salt, and Worcestershire sauce.

Refrigerate the cocktail sauce before serving.

Once the poaching liquid is ready, add colossal jumbo shrimp (easy peel) to the boiling liquid and poach for 5 minutes.

After 5 minutes, transfer the shrimp to a bowl of ice water to chill and stop the cooking process.

Once the shrimp are cold, drain them and prepare for serving.

Peel the shrimp if desired, leaving the tails on for presentation.
