Shrimp Cocktail

1 pound shrimp (21-25 count, tail-on)
1/2 cup American chili sauce
1.5 tablespoons horseradish
Worcestershire sauce (to taste)
hot sauce (to taste)
lemon juice (from 1-2 lemons)
ice (for ice bath)
lemon wedges (for serving)

Prepare gently simmering water in a pot.

Add 10-12 whole black peppercorns to the water.

Add salt and Old Bay Seasoning to the water and mix.

Bring the water to a quick boil, then reduce to a simmer.

Add 1 pound of tail-on shrimp to the simmering water and poach for about 3 minutes.

While the shrimp are poaching, prepare the cocktail sauce.

In a bowl, combine 1/2 cup American chili sauce, 1.5 tablespoons horseradish, Worcestershire sauce, hot sauce, and lemon juice.

Mix the cocktail sauce and taste for seasoning.

Once the shrimp are done, turn off the heat and prepare an ice bath.

Transfer the shrimp to the ice bath to stop the cooking process and prevent overcooking.
