Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 cup cocktail sauce
  • 1 lemon, cut into wedges
  • 1 tbsp fresh parsley, chopped
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. 1Fill a large pot with water and add salt. Bring to a boil over high heat.
  2. 2Add the shrimp to the boiling water and cook for 2-3 minutes, or until they turn pink and opaque.
  3. 3Remove the shrimp from the pot and immediately place them in a bowl of ice water to stop the cooking process.
  4. 4Once cooled, drain the shrimp and pat them dry with paper towels.
  5. 5Arrange the shrimp on a serving platter or individual glasses.
  6. 6Serve with cocktail sauce on the side and lemon wedges for garnish.
  7. 7Sprinkle chopped parsley over the shrimp for added flavor and presentation.

Instructions

  1. 1In a large bowl, combine the shrimp, lime juice, minced garlic, and salt. Toss to coat and let marinate for 15 minutes.
  2. 2Heat the olive oil in a large skillet over medium-high heat.
  3. 3Add the marinated shrimp to the skillet in a single layer. Cook for 2-3 minutes on one side until they turn pink and opaque.
  4. 4Flip the shrimp and add the chopped peanuts and black pepper. Cook for an additional 2-3 minutes until the shrimp are fully cooked and the peanuts are toasted.
  5. 5Remove the skillet from heat and garnish with fresh cilantro.
  6. 6Serve immediately with lime wedges on the side.
