Combine flours in a large bowl.
Dissolve yeast in warm water and let sit until frothy, about 5 minutes.
Add milk, honey, and melted butter to the yeast mixture.
Mix the wet ingredients into the flour until a dough forms.
Knead the dough on a floured surface for about 10 minutes until smooth.
Place the dough in a greased bowl and cover with a cloth; let rise until doubled, about 1 hour.
Punch down the dough and divide into three equal pieces.
Roll each piece into a rope about 12 inches long.
Braid the three ropes together and tuck the ends under.
Place the braided dough on a baking sheet lined with parchment paper.
Cover and let rise for 30 minutes.
Preheat the oven to 375°F (190°C).
Brush the loaf with beaten egg and sprinkle with seeds and oats.
Bake for 25-30 minutes until golden brown and hollow-sounding when tapped.
Cool on a wire rack before slicing.
