1

Slice 2 cloves of garlic and 1/4 of an onion.

2

Take a small bunch of green onion, separate the green and white parts, and cut into 2-inch sections.

3

Slice a wedge of cabbage and 1 stalk of celery.

4

Cut 1/2 of a bell pepper, remove the seeds, and slice it.

5

Cut the chicken breast into slices along the grain.

6

Marinate the chicken with salt, sugar, rice wine, crushed garlic, baking soda, cornstarch, white pepper powder, and a little oil for about 15 minutes.

7

Prepare the sauce with oyster sauce, soy sauce, duck soy sauce, sugar, and sesame oil.

8

Cook fresh chow mein noodles in water for about 5 minutes, drain, and mix in a little oil to prevent sticking.

9

Stir fry the aromatics (garlic, onion, and white part of green onion) in 1 tablespoon of oil over medium-high heat until slightly soft.

10

Pour out the aromatics and add another tablespoon of oil to stir fry the vegetables, seasoning with a little sugar and salt until slightly soft.

11

Remove the vegetables and add oil back to the pan to stir fry the chicken.

12

When the chicken is half cooked, add dark soy sauce and continue to stir fry until fully cooked.

13

Pour out the chicken, add oil back to the pan, and stir fry the noodles until hot.

14

Add the prepared sauce to the noodles and stir until evenly colored.

15

Add the chicken, vegetables, aromatics, green onion, and some black pepper back to the pan, and stir fry until mixed together.
