Measure out 5 oz of stir fry noodles and set aside.

Chop 5 cloves of garlic and set aside.

Slice 1 red onion in half, then cut into strips and set aside.

Slice 2/3 of a chicken breast into small pieces for uniform cooking.

Season the chicken with salt, white pepper powder, light soy sauce, and optional Shaoxing cooking wine and corn starch or potato starch. Mix well and seal with a little oil (avocado oil).

Prepare the sauce by mixing about 1 tablespoon of oyster sauce, a little over a tablespoon of light soy sauce, dark soy sauce for color, and sesame oil. Add a little water and mix together.

Boil water and cook the noodles for about 30 seconds, ensuring they don't get too soft.

Transfer the cooked noodles to ice water to cool, then strain and add a little sesame oil to prevent sticking.

Heat the wok to high until smoking, then add oil.
