1

Separate fresh Chinese egg noodles to prevent clumping.

2

Boil water and add the separated noodles, cooking for 20 seconds.

3

Remove the noodles from the boiling water and spread them on a tray to cool.

4

Refrigerate the noodles for at least 30 minutes to dry them out.

5

Group the cooled noodles into four small bundles for easier cooking.

6

Heat oil in a wok and add one bundle of noodles, tossing to loosen them and achieve a slightly crispy texture.

7

Remove the cooked noodles and set aside.

8

Marinate chicken thigh with soy sauce, Chinese Shaoxing wine, bicarbonate soda, and white pepper.

9

Prepare the stir fry sauce by mixing soy sauce, oyster sauce, dark soy sauce, Chinese Shaoxing wine, and sugar.

10

Slice the pale part of the spring onion and the green part separately for different flavor uses.

11

In a hot pan, add oil, the pale part of the spring onion, ginger, and chicken, stir frying until the chicken is cooked.

12

Add carrot and cabbage to the pan and stir fry until tender.

13

Add the prepared noodles and stir fry sauce, tossing to combine.

14

Add the green part of the spring onion and turn off the heat.
